SAMBAL SOY DRESSING

Based off Singapore wonton mee dressing, this sweet, salty and spicy dressing is so good on noodles, dumplings, or just plain steamed vegetables. It will make even boiled broccoli come alive.

Serves 2

1 tablespoon Red Hot Sambal Tumis
2 tablespoons dark soy sauce
1/2 teaspoon of light brown sugar (optional)

Stir them together, voila!
Make sure to get the chilli spiked oil in there, or if it needs more oil, feel free to use a tablespoon of fragrant shallot oil or sesame oil. Traditionally hawkers would stir in char siu drippings…

This makes plenty for 2 bundles of egg noodles, a dozen wontons, or a platter of steamed greens.
