GADO GADO – INDONESIAN PEANUT SAUCE SALAD

For a salad that won’t sacrifice on flavour, toss your favourite crunchy veg in this moreish sambal-peanut sauce that comes together in minutes. While all sorts of chopped vegetables will work in this salad, we’ve included a traditional and simple combination here.

Serves 1


For the peanut sauce
2 tbsp deep-roasted crunchy peanut butter 
2 tsp Rempapa sambal tumis
2 tsp kecap manis
Juice of half a lime

For the salad
Cucumber
Boiled potatoes
Shredded cabbage or lettuce
Beansprouts
Firm tofu

To serve
Fried shallots
Boiled egg
Prawn Crackers

Combine peanut butter, sambal, kepap manis, and lime juice for your sauce, tasting as you go. Add hot water to loosen if needed. 
Chop vegetables of your choosing into bite sized pieces. Toss in peanut sauce. Add fried shallots, and top with an optional boiled egg.
